Yields 10 servings

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Cocktail (makes 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Place the listed ingredients into a pot, bring to a simmer, stirring until the sugar dissolves. Then, turn off the heat and leave to cool completely. Decant into a sterilised bottle, cap it keeping it chilled, where it will keep for up to a month.

For the Batch Mix: Mix every spirits and syrup in a big jug, leave to sit for one hour, then strain best through a fine cloth, so it's fully clarified.

To serve: Pour 85ml of the premix into your mixing glass packed with ice, gently stirring gently for a minute to chill. Strain into a chilled martini glass or equivalent, garnish with some cranberries and finish using a light spray with the mandarin essence above the glass.
